Whisk egg yolks well and set aside.

Whisk butter, garlic, cayenne and half and half over medium heat. Bring to a simmer.

Add cheeses, whisking to combine.

Remove from heat. Temper egg yolks using 1 cup of mixture: while whisking, add slowly to cheese mixture, to prevent curdling.

Pour back into sauce, whisking until well-combined. Add salt and pepper. Remove from heat and allow to cool 5 minutes before using as desired over pasta, chicken, etc.


To make a Cajun verion of this sauce, add to finished sauce: increase cayenne to 1 tsp, 1 tbsp Worcestershire, 1 tbsp Tabasco

Increase Tabasco if more heat is desired.
